Processing: Washed Of all the year over year buying we do, Alberto’s coffee is the peak example of witnessing magic at work. Through economic and environmental foibles, this coffee from his Las Afiladeras farm simply shows up, every year. And each year somehow shows up a little different. It’s always harmonious and unassuming but always paints a slightly different picture with its shifting acid presence. Some years, the citrus color is yellow, some years it’s been orange. This year? (Our 6th Year roasting Alberto's coffee!) It’s all pinks, dark reds and purples. And it stuns. Next to coffees with higher hype heft built-in. Next to coffees with more aggressive fermentation profiles. This, the seventh Las Afiladeras lot we’ve featured, is a peak.
